The canteen is operated by external catering firms Nigivia S.r.l. and Nicolai Ricevimenti S.r.l., and follows Italian Health Ministry guidelines. A complete meal comprises a first and second course, plus fruit/dessert and water. A price list and menus are published; Menu 1 and Menu 2 rotate every four weeks; special menus and nutritional information are available.
The school is substantially funded by the Federal Republic of Germany and is supported by private involvement from parents represented in the DS Rom school association. The school has no shareholders or investors. The supervisory body is the association council, and the school's operations are governed by the association's statutes.
